Ingredients

• 1 medium Onion, diced

• 3 Cloves Garlic, minced

• 1 tsp Olive oil

• 1/2 tsp dried rosemary

• 28oz can diced tomato

• 15oz can tomato sauce

• 1/2 tsp dried oregano

• 1/2 tsp dried basil

• 1/2 tsp salt

• 1/4 tsp pepper

• 4 Cup Chicken stock

• 1/2 Cup heavy cream

• 20oz cheese tortellini

• 1/2 Cup shredded (or grated) parmesan

• Fresh basil for garnish

Instructions

1. Saute onion, garlic, olive oil, and rosemary in 6-quart soup pot until onions are translucent.

2. Add tomatoes, sauce, remaining spices, and heavy cream.  Simmer for 20 mins.

3. Add tortellini and cook for 15-20mins.

4. Stir in cheese, serve with garnishes.
