Cinnamon Rolls
Ingredients
Dough
450g AP Flour
100g Sugar
5g instant Yeast
8g Salt
1g Baking Soda
115g (1 stick) Butter
225g Plain Yogurt
115g Milk
Filling
115g (1 stick) Butter, softened
150g Brown Sugar
20g Cinnamon
1g Salt
Frosting
115g Cream Cheese, softened
10g Vanilla Extract
140g Powdered Sugar
Zest of 1/2 lemon
Instructions
Dough
In a small saucepan, combine milk and butter, heat until butter is melted and set aside.
Once cooled a bit, add yogurt and cool further to 100F.
In stand mixer, combine flour, sugar, salt, baking soda, and yeast.
Pour in wet ingredients and mix on low for 4-5 minutes, then on medium for 3 minutes, and high for 1 minute. Dough should be shiny and well developed. When stretched, can see some light through it.
Let rise in a warm place for 90-120 minutes until doubled.
Roll into 18"x7" rectangle ~1" thick.
Spread filling and roll up.
Use wet serrated knife to cut into 4 rolls.
Place in 8"x8" pan, cover, and rise in fridge overnight.
Tent with foil and bake 350F for 45min. Remove foil and bake another 15-20min.
Liberally frost while hot.
Filling
Whip everything with paddle attachment until well creamed, ~5-7min.
Frosting
In mixer with whisk attachment, add cream cheese, vanilla extract, half the powdered sugar, and lemon zest.
Mix until incorporated and then add remainder of powdered sugar. Mix until well creamed for ~3 minutes. Will hold on counter overnight or make in morning.
