Serves: 4-6 Cooking Time: 30 min
The Meat
Ingredients
1/2 medium onion, rough chopped
4 cloves garlic
1 lb ground lamb (85/15)
1 lb ground beef (90/10)
1/2 C breadcrumbs
2 tsp oregano
3 tsp coriander
1 tsp black pepper
1 tsp chili flake
1 Tbsp cumin
1 tsp salt
Instructions
In a food processor, mince onion and garlic.
Add remainder and process until combined and meat is broken down. Texture should be sticky.
Measure into 6 balls. Shape each ball into an oblong, thin oval shaped patty. Stick 2 skewers through each patty.
Grill on high for 5 min on one side. Flip to other side for 3-4 more minutes. Done at internal temp of 150F.
Allow meat to rest for 5 min and then slice thinly to mimic cut from spit.
Toppings
Cucumber Tomato Salad
1 medium cucumber, partly skinned, remove seeds, dice.
1 tomato, medium diced
1/2 red onion, medium diced
1/3 C fresh parsley, chopped
1/2 lemon, juiced
1 Tbsp olive oil
1 pinch, salt
Combine in bowl and let marinate.
Lemon Herb Yogurt Sauce
1 C plain yogurt
1/3 C mayo
1/2 lemon, juiced
1 clove garlic, minced
1/4 tsp salt
2 Tbsp fresh dill, chopped
Combine all but dill and blend until smooth. Stir in dill.
Instructions
Toast pita or tortilla on both sides. Add meat, top with a generous drizzle of the yogurt sauce, crumbled feta, pepperoncinis (optional), and a large spoonful of the cucumber salad.
